Avocado, egg and spinach sandwich

The best vegie sandwich around!

  • 2 slices wholemeal or multigrain bread
  • 1/2 cup spinach leaves
  • 1 egg, hard boiled and de-shelled
  • 2 tablespoons avocado
  • 1 tablespoon low-fat natural Greek yoghurt
  • 1/4 teaspoon Dijon mustard
  • 1/2 tablespoon lemon juice


1. Put spinach leaves over one slice of bread.

2. In a small bowl, mash egg and avocado together. Add yoghurt, mustard and lemon juice and mix well.

3. Spread over the remaining bread slice and sandwich to the spinach.
