Cauliflower and broccoli gratin

Serves: 6


  • ½ medium cauliflower, cut into florets
  • 1 head broccoli, cut into florets
  • 2 tablespoons cornflour
  • 2 cups low-fat milk
  • 2 tablespoons (30g) grated reduced-fat cheese
  • Pinch nutmeg
  • ¼ cup fresh breadcrumbs
  • 2 tablespoons grated Parmesan cheese


1. Steam vegetables for 6-8 minutes until tender and place in an ovenproof dish.

2. In a saucepan, mix cornflour with a little milk to form a paste, stir in remaining milk and bring to the boil, stirring until thickened. Add cheese and nutmeg and pour over vegetables.

3. Top with breadcrumbs and Parmesan cheese.

4. Grill for 3-4 minutes until golden brown or bake in a moderate oven for 15-20 minutes.
