Tomato and garlic bruschetta

An Italian appetiser - toasted bread topped with fresh chopped tomatoes, garlic, basil and olive oil.

Preparation time: 7 minutes

Cooking time: 10 minutes

  • 5 serves of vegies in this recipe

  • 4 slices crusty bread, cut into 2-3 cm thick slices

  • 2 cloves garlic, peeled and halved

  • 2 teaspoons olive oil, warmed

  • 2 medium ripe tomatoes, sliced

  • 1 tablespoon red or white onion, finely diced

  • A few fresh basil leaves, torn into small pieces


1. Lightly toast bread on both sides under grill or in a hot oven at 200°C for 10 minutes each side. 

2. Rub both sides of bread with garlic and brush with oil. 

3. In a small bowl mix onion and basil. 

4. Place slices of tomato on each piece of toast and top with onion and basil mixture.
